From the Geist kitchen: AnnMarie's Shortbread Cookies

Patty Osborne

Those of you who couldn't make the Geist christmas party can still get a taste of the scrumptious cookies that we ate there.

AnnMarie's Family's Shortbread Cookies

  • 1 cup unsalted butter
  • 1/2 cup icing sugar
  • 1 tsp vanilla powder
  • 2 cups flour
  • 2 tsp corn starch
  • 1/2 tsp salt

Preheat the oven to 350 degrees.

Cream butter, sugar and vanilla. Add the sifted dry ingredients and mix until ingredients come together into a ball. (At this point, you can refrigerate or freeze the dough to use later. I sometimes form the dough into a cylinder, wrap and freeze. Then if I want just one cookie, I can slice it off and bake it—yum.)

Roll and cut with cookie cutters. Bake until the edges of the cookies are golden.

From the desk of our Operations Manager and baker extraordinaire, AnnMarie MacKinnon.
