Big Night I have wanted to be able to make risotto. Now, with the help of Risotto (Macmillan) by Judith Barrett and Norma Wasserman, I can. And as I simmer my brodo and prepare my condimenti, I imagine myself in Frances Mayes's kitchen near Cortona. I am wearing espadrilles and a red necker chief and I'm humming a familiar aria. Ciao, bambini.
